Carrot Apple Muffins

My family loves muffins. Instead of always going with the usual banana or chocolate chip, I tried to find a recipe that included some more healthy options. I found this recipe for Carrot Apple muffins. To be honest, I'm apologizing to whoever originated this recipe, because I really don't know where to give credit. I've had it written on a piece of paper inside my cupboard door for the last 3 years+. If anyone finds the original, please let me know and I'll happily credit them! :)
Carrot Apple Muffins
Grate:
- 1 large apple
- 2 cups of carrot (approx ~2-3)
Whisk together:
- 2 c. flour
- 1¼ c sugar
- 3/4 tsp baking soda
- 1½ tsp baking powder
- ½ tsp salt
- 1½ tsp cinnamon (I personally love using Tupperware's cinnamon-vanilla spice!)
Set aside.
Combine:
3 eggs
3/4 c. oil
1 tsp vanilla
Add to flour. Fold with grating. Stir until just moistened. Fill tins.
Bake at 350°F for 20-25 minutes.
Allow to cool and enjoy!
